We also enjoyed our time in the
kitchen making yummy food out of apples. Here are a few things we
made:
Apple Pancakes
Whip up your favorite
pancake recipe and add finely chopped apples.
My husband likes to cook
fry them in oil so the ends get crispy. Fattening I know, but oh so
good!!
Apple Syrup
2 cups finely chopped
apples, peeled and cored
3/4 cup packed brown sugar
3 T. butter
1 tsp. ground cinnamon
1 1/2 tsp. vanilla extract
1.Combine apples, brown
sugar, butter and cinnamon in a saucepan.
2.Bring to a Boil. Reduce
heat; simmer, uncovered 5-7 minutes or until syrup is desired
consistency.
3.Remove from the heat and
stir in vanilla.

Apple Pie
Pastry for 9-inch
Two-crust Pie
3/4 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Dash of salt
6 cups thinly sliced pared
tart apples
2 tablespoon butter
1.Heat oven to 425°.
2.Prepare pastry.
3.Stir together sugar,
flour, nutmeg, cinnamon and salt; mix with apples.
4.Turn into pastry-lined
pie pan; dot with butter.
5.Cover with top crust
which has slits cut in it; seal and flute.
6.Cover edge with 2- to
3-inch strip of aluminum foil to prevent excessive browning; remove
foil last 15 minutes of baking.
7.Bake 40 to 50 minutes or
until crust is brown and juice begins to bubble through slits in
crust.
Apple Betty
4-5 Apples
3/4 Cup Flour
3/4 Cup Brown Sugar
1/2 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1/4 Teaspoon Salt
1/3 Cup Melted Butter
1.Peel and cut up apples.
2.Put pieces in pie pan.
3.Put salt, flour, sugar, cinnamon, nutmeg
in bowl.
4.Melt butter in saucepan and pour in
Bowl.
5.Mix with fork. Spoon mixture over apples
in pan, covering completely.
6.Bake at 375 for 35 minutes or until
apples are soft.
7.Serve in small dessert cups with whipped
cream on top.
Baked Apples
4 Apples
¼ teaspoon nutmeg
½ teaspoon cinnamon
2 Tbs.sugar
¼ Cup raisins
2 Tbs. toasted walnuts
½ Cup apple juice
1.Preheat oven to 375
2.Wash apples and core
them leaving the bottom still attached.
3.Add ¼ cup apple juice to
the bottom of a lipped baking pan.
4.In a small bowl mix
together nutmeg, cinnamon, sugar, raisins, walnuts and remaining ¼
cup apple juice.
5.Fill the middle of each
apple with mixture and place in a baking pan.
6.Cover with foil and bake
for 25- 30 minutes, until apples are soft.
**When serving apples,
spoon baking juices over them.
